Masala Chai - the tea Indians have been drinking for thousands of years.

100g sachet, approx 20 tablespoons of tea.

To make this tea I start by toasting cardamom, fennel, cloves, cinnamon and pepper, then give it all a rough grind in the pestle and mortar. Ginger powder is added, then I mix these fragrant spices with loose black tea.

The health benefits of drinking this tea are numerous, each spice playing its part. Have one cup a day and see for yourself!

For best results make this tea in a saucepan - use 1 heaped tablespoon per cup of water. Bring to the boil then simmer for 5 minutes. Add a little milk then simmer until the tea darkens. Add sugar to taste. Strain into your favourite teapot and serve.
